History of the Portuguese Custard Tart
The Portuguese custard tart, or Pastel de Nata, has a rich history dating back to the 19th century. It originated in Lisbon at the Jerónimos Monastery in the district of Belém. Monks and nuns used egg whites to starch their clothes, leaving an abundance of leftover egg yolks. To avoid waste, they began using the yolks to create various pastries, including the iconic custard tarts.
In 1834, following the closure of many monasteries in Portugal due to the Liberal Revolution, the monks started selling the recipe to a nearby sugar refinery. Soon after, the owners opened Fábrica de Pastéis de Belém in 1837, where the original recipe is still used today. Over time, Pastéis de Nata spread across Portugal and around the world, becoming one of the country's most beloved pastries.
